My Home-Made Pizza


Well...we all know what Pizza is...  My family too love Pizza.  But my parents are elderly and cannot digest easily the Pizza bought from the shop.  Therefore, I have my own modified recipe to suit the palette and the health needs of my family.
Ingredients
Pizza Base:
500g of Plain flour
1 Sachet of Instant Yeast (Dry quick-rise yeast)
1 tbsp on butter
1/2 tsp of Bi-carbonate Soda
1/2 tsp of Origanum
Pinch of salt
Mix all the above ingredients.  Knead the dough with warm water and leave in a warm place for half an hour.  Knead again after half an hour.  Pre-heat the oven to 180 Celcius. Grease 2 trays and sprinkle with flour.  Roll out the dough and spread into both trays.  Prick with a fork.  Bake the base for 18 minutes.

Tomato Paste (all ingredients chopped finely in a chopper)
4 medium tomatoes
1 tsp garlic
1 tbsp chopped basil
1/2 tsp salt
Cook these in a pan on high heat for five minutes.  Spread the tomato paste on to the cooked pizza base.

Topping (all vegetables thinly sliced)
Bell peppers (Capsicum)
Onions
Mushrooms
Olives
1 tbsp Olive oil
Mozarella/Parmesan/Cheddar Cheese (I used Cheddar because my son loves melted Cheddar Cheese)
In a non-stick pan.  Pour the olive oil, and stir fry the vegetables on high heat for 5-7 minutes.  Spread them on to the pizza base with tomato sauce already on it.  Bake the Pizza for 5 minutes.  Remove and spread the cheese on top, while pizza is still hot.  since I used cheddar I put the pizza back into the oven for 2 minutes so that the cheese melts nicely.

Well, cut and serve.
Variations

1.  Use the vegetables and cheese of your choice for topping.
2.  I used Bi-Carbonate Soda to make to softer to chew and easier to digest for my elderly parents.  But you can leave it out, if u wish.
